Part 91 contains some information that is applicable even to ultralights. This isn't about the plane itself but discusses how you can use your ultralight - simply what you can and can't do with it. It's not all applicable, but some of it is at minimum, good to know info.

These documents contain the primary rules for ultralights. The appendix contains the methods of measurement for your ultralight that the FAA will accept.

In many discussions, Part 103 is all that is referred for the requirements of ultralights. This however leaves a good portion of useful information on how Part 103 regulations are administered out.
